Today we’re sharing our delicious guilt-free honey, ginger and coconut popsicle recipe! Research has shown that these ingredients make all kinds of magical things happen, such as preventing illness, keeping you hydrated and keeping your body in good shape. Honey is antibacterial, ginger helps to regulate your stomach and coconut is a source of vitamins, minerals, fiber and electrolytes. All three are chock full of antioxidants and will keep you feeling tip-top and looking lovely. Get out your molds and make these now.

Ingredients:
3 (14-ounce) cans full-fat coconut milk
1 ounce simple syrup
1 (4-inch) piece fresh ginger, finely grated
1 cup local honey
Tools
Popsicle molds
Wooden popsicle sticks
Directions:
- In a heavy-bottomed medium-size saucepan, stir together the coconut milk, ginger and honey. Bring to a boil over medium-high heat, stirring occasionally, until the honey is completely dissolved. Reduce heat to low and simmer for 10 minutes to allow the ginger to infuse the mixture. You will be able to smell the ginger.
- Strain the mixture through a fine-mesh sieve, preferably into a large liquid measuring cup or other vessel with a lip (for easier pouring). Allow the mixture to cool to room temperature, then divide it evenly among popsicle molds. Cover the molds, insert sticks and freeze until firm.
